How did this place come about and what made it different from the start?<\/strong>
Naci\u00f3 en pandemia, en 2020. Comenc\u00e9 horneando pan en el hall de mi casa. A los pocos meses, el local donde comenzamos, en la colonia Escand\u00f3n, se puso disponible y decidimos rentar. Siempre lo quise para un bar de cerveza draught. Cuando estuvo disponible, estaba experimentando con masa madre y, del sue\u00f1o de hacerlo a\u00f1os atr\u00e1s, se comenz\u00f3 a materializar “sin querer”.<\/p>\n\n\n\n

What part of the day, space, or creative process do those who work here enjoy the most?<\/strong>
Cada horario tiene lo suyo. En las ma\u00f1anas, prender los hornos, pan que comienza a salir, caf\u00e9, en chinga pero con calma. Obvio, las 7:30am que abrimos, ver a los clientes llegar por su pancito y caf\u00e9.<\/p>\n\n\n\n

En cuanto a la producci\u00f3n, creo que tambi\u00e9n hay muchos horarios especiales: formado de barras, amasado, laminado… Hay procesos todo el tiempo. Se tiene que disfrutar lo que uno hace.<\/p>\n\n\n\n

If someone is coming in for the first time, what should they not miss?<\/strong>
Ufff, qu\u00e9 dif\u00edcil… pero creo que mi pieza de pan dulce favorita puede ser las conchitas. El rollo de ar\u00e1ndano es incre\u00edble, el panqu\u00e9 de cocoa y espresso… Y de pan salado, creo que s\u00ed o s\u00ed una barra y una hogaza de la casa para llevar.<\/p>\n\n\n\n

Nuestro Flat es muy bueno.<\/p>\n\n\n\n

Y creo que los molletes con tocino y aguacate son definitivos.<\/p>\n\n\n\n

What has been an interesting challenge that has made you rethink something about the project?<\/strong>
Emprender no es f\u00e1cil. No es f\u00e1cil tomar la decisi\u00f3n de hacerlo y, una vez que lo haces, te das cuenta de que en realidad no tienes idea de la cantidad de situaciones que tenemos que atravesar. Todos los d\u00edas suceden cosas. Al final, el pensamiento sigue siendo el mismo: \u00a1Tenemos que seguir!<\/p>\n\n\n\n

El horno con el que damos servicio en el \u00e1rea de cafeter\u00eda es un ROFCO, con una historia incre\u00edble detr\u00e1s. Fue con el que comenc\u00e9 a hornear en casa.<\/p>\n\n\n\n

Y, en general, el primer local. Se hac\u00eda todo: amasar, hornear, caf\u00e9… Era una locura, hasta hace un par de a\u00f1os que pudimos rentar un espacio bastante m\u00e1s grande del otro lado de la calle y sacar los hornos. Era un cotorreo sacar servicio, pan, caf\u00e9, loza, etc., etc., etc.<\/p>\n\n\n\n

Nuestro refrigerador de barra comenz\u00f3 como refrigerador para fermentar hogazas. Hoy tenemos varios refrigeradores y este a\u00f1o vamos a armar una c\u00e1mara fr\u00eda.<\/p>\n\n\n\n

CDMX. \u00a1Qu\u00e9 caos y qu\u00e9 chingona es! Tambi\u00e9n es ruda y hay que saber por d\u00f3nde.<\/p>\n\n\n\n

Kitchen Confidential<\/em>: cuenta las cosas “como son” en el d\u00eda a d\u00eda de la industria de la gastronom\u00eda. Nosotros no escondemos nada, es un proyecto aut\u00e9ntico que sali\u00f3 del coraz\u00f3n.<\/p>\n\n\n\n
