El nombre proviene de\u00a0<em>cendra<\/em>, que significa &#8220;ceniza&#8221; en catal\u00e1n: la ceniza que queda del fuego de Darvaza. Resume bastante bien nuestra filosof\u00eda. Nos gusta cocinar con tiempo, respetar el producto y dejar que la brasa haga su trabajo. La parrilla se convierte en el centro de todo y cada producto tiene su momento. Trabajamos con carnes que requieren distintos tiempos de maduraci\u00f3n, pescados, arroces y una barra de fr\u00edos donde nos especializamos en nigiris y tartares. Cada elaboraci\u00f3n exige un tratamiento diferente, y eso hace que el trabajo nunca sea rutinario. La experiencia comienza por el espacio: una cocina completamente abierta a la brasa, un sal\u00f3n elegante y una terraza muy agradable.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Empezar\u00eda con una degustaci\u00f3n de nuestros nigiris, elaborados con un producto excepcional y mucho cuidado. Despu\u00e9s seguir\u00eda con el torrezno de Soria y el steak tartar de buey certificado de El Capricho, una de nuestras especialidades. Antes del plato principal, no puede faltar uno de nuestros espetos, ya sea de carne o de pescado. Y, por supuesto, como plato principal, nuestras carnes. Los chuletones de la carta de maduraci\u00f3n representan muy bien lo que hacemos aqu\u00ed. Tenemos brasas, una barra de fr\u00edos con nigiris y tartares, carnes maduradas, pescados y una cocina m\u00e1s delicada, pero todo deb\u00eda tener sentido dentro de una misma filosof\u00eda.
