How did this place come about and what made it different from the start?
<\/strong>Fenster started with a very specific calculation. I sat down and thought: the average check at a coffee shop is around five or six euros. To make the same money as a place that also sells food, you need three or four times more customers. But those customers won’t come because there are no croissants. A vicious cycle.<\/p>\n\n\n\n

The way out turned out to be unexpected: cut every cost possible. No seating area, no bathrooms, no cashier, no food. Just a window and the best coffee I know how to make.<\/p>\n\n\n\n

That’s how Fenster was born, literally out of a hole in the wall of one of the five oldest buildings in Vienna. What made it different from day one was radical honesty about what it was. We weren’t trying to be a cozy caf\u00e9 for everyone. We were a window for people who understand that great coffee doesn’t need a sofa.<\/p>\n\n\n\n

What part of the day, space, or creative process do those who work here enjoy the most?
<\/strong>The morning before we open. No line, no questions, no decisions. Just you, the machine, and the beans.<\/p>\n\n\n\n

I always start my day with a coffee for myself. Not to check the settings, not out of habit, just because it’s the one moment when brewing is purely personal. That’s when you remember why you chose this in the first place.<\/p>\n\n\n\n

Fenster is a to-go place, and there’s something almost paradoxical about the fact that the most valuable moment here is the one when you’re not rushing anywhere and drinking coffee alone.<\/p>\n\n\n\n

The people who work with us feel it too. We specifically look for baristas who come to Fenster for the coffee, not for the job. When that kind of person joins the team, the morning ritual becomes something shared. That’s the heart of this place.<\/p>\n\n\n\n

If someone is coming in for the first time, what should they not miss?
<\/strong>The Fensterccino.<\/p>\n\n\n\n

It’s a cappuccino, or something between a macchiato and a cappuccino, served in a waffle cone dipped in Belgian chocolate.<\/p>\n\n\n\n

I originally added it to the menu as a hook, something to catch people’s attention as they walked by. I had no idea it would become the symbol of Fenster and end up in thousands of Instagram photos.<\/p>\n\n\n\n

But if you’ve been here before and already know what specialty coffee is, ask for a filter coffee from our own roast. We brew every cup individually from a single-serve stick we produce ourselves, using a filter machine with controlled temperature and time.<\/p>\n\n\n\n

You can even pick your beans from your phone on the way here. And if you’re lucky, we’ll have the Gesha. One of the rarest and most expensive coffees in the world, including 90+ scoring lots from Panama. You won’t find it anywhere else in Vienna.<\/p>\n\n\n\n

What has been an interesting challenge that has made you rethink something about the project?
<\/strong>The winter of 2021.<\/p>\n\n\n\n

In February alone we did \u20ac84,000. It was our first real record. Lines of a hundred people, 1,100 coffees a day, three people behind the counter. We were convinced we’d cracked the formula.<\/p>\n\n\n\n

So we started spending and planning as if that was the new normal. Our own roasting operation, a retail store, new spaces, equipment. All at once, all expensive.<\/p>\n\n\n\n

Then winter 2022 hit. Covid restrictions, freezing temperatures, sales tanked, and we found ourselves with a nearly empty bank account and a very large payroll.<\/p>\n\n\n\n

I had to gather the entire team and let everyone go. It was the hardest decision I’ve ever made as a business owner. But it’s what saved Fenster.<\/p>\n\n\n\n

That moment permanently changed how I think about growth: success is not a state, it’s an episode. After every high, the move isn’t to expand. It’s to get stronger.<\/p>\n\n\n\n

What influence, idea, or reference continues to shape the way you work today?
<\/strong>Two things: a book and a sentence.<\/p>\n\n\n\n

The book is Espresso Coffee<\/em> by David Schomer. I read it before I’d even opened my first caf\u00e9, and it described a taste I’d never actually tried but already knew I wanted to create. It set the bar I’m still working toward.<\/p>\n\n\n\n

The sentence came from a well-known and influential entrepreneur who looked me in the eye and said: \u201cI wouldn’t recommend going into coffee. You’ll waste your time and money.\u201d<\/p>\n\n\n\n

After that, I knew it would go the opposite way.<\/p>\n\n\n\n

I still use that same line myself. I say it to everyone who comes to me asking about opening a caf\u00e9. Not to discourage them, but to find out: if that sentence doesn’t stop you, you probably know exactly what you want.<\/p>\n\n\n\n

What place, project, or person has inspired you recently and why?
<\/strong>The US.<\/p>\n\n\n\n

I moved here over a year ago, and the US keeps reshaping the way I think about service and hospitality.<\/p>\n\n\n\n

A server here smiles not because it’s in the employee handbook, but because they understand that their income depends on how genuinely they treat the person in front of them.<\/p>\n\n\n\n

Tipping here isn’t a thank-you. It’s part of the actual compensation structure. And that changes people’s entire relationship to their work.<\/p>\n\n\n\n

I’m bringing that logic to Fenster. We built our own digital tipping system and spent several years and tens of thousands of euros on it because I want our baristas to earn well, not just because I pay them, but because every customer whose day they made a little better plays a part in that too.<\/p>\n\n\n\n

If your space could invite someone to collaborate for a day, who would it be and what would you do together?
<\/strong>Gwilym Davies, World Barista Champion in 2009.<\/p>\n\n\n\n

I trained with him at a course near Prague, already having my own caf\u00e9 at that point. He didn’t tell me anything I didn’t already know, but he helped me organize what I understood intuitively and gave me answers to questions I hadn’t been able to put into words.<\/p>\n\n\n\n

If he came to Fenster for a day, I’d brew him our Gesha as a filter, slowly, with no rush, two cups from two different beans.<\/p>\n\n\n\n

And we’d just talk: about where specialty coffee is heading and whether a coffee-only format actually has a future in a world where everyone also wants avocado toast.<\/p>\n\n\n\n

I think we’d have plenty to say to each other.<\/p>\n\n\n\n

Is there an object, corner or detail of the place that has a story that few people know?
<\/strong>Our most popular product, the Fensterccino, was selling two or three cups a day during the first couple of months after we opened. A complete failure.<\/p>\n\n\n\n

I couldn’t figure it out. The cone was there, the coffee was there, it tasted great, but nobody cared.<\/p>\n\n\n\n

The answer turned out to be embarrassingly simple: people walking by had no idea what it was. The name on the menu explained nothing.<\/p>\n\n\n\n

So I asked a friend from the shop next door to pose for a photo, put a cone with latte art in her hand, printed it on a plastic board about 40 by 40 centimeters, and hung it next to the menu.<\/p>\n\n\n\n

Sales went up tenfold overnight.<\/p>\n\n\n\n

That photo, not a marketing strategy, not influencers, not ad spend, is what started everything. Later, a blogger from the Gulf posted about us and things really took off. But at the foundation of it all is an ordinary printed photograph that hung on that wall for years and changed the fate of this place.<\/p>\n\n\n\n

If this project were a city, a book, or a record, which would it be and why?
<\/strong>I’d compare Fenster to the film Am\u00e9lie<\/em>.<\/p>\n\n\n\n

On the surface, it’s a simple story: a girl, Paris, a caf\u00e9, a smile. You watch it and immediately feel warm, happy, like you want more.<\/p>\n\n\n\n

That’s exactly how the Fensterccino works. You see someone walking by with one, you walk up, you get one, and you’re already glad you did. No explanation needed. It works for everyone, and it’s genuinely good.<\/p>\n\n\n\n

But Am\u00e9lie<\/em> isn’t just about cr\u00e8me br\u00fbl\u00e9e and a red coat. Jean-Pierre Jeunet packed every frame with details most viewers simply don’t catch in time. They don’t announce themselves. They’re just there.<\/p>\n\n\n\n

For the people who pay attention, the film becomes something else entirely. Deeper. More personal.<\/p>\n\n\n\n

Fenster has that hidden side too: filter coffee from our own roast, brewed individually for each order. Remarkable beans. We don’t really advertise it. Maybe two out of a hundred people order it.<\/p>\n\n\n\n

But those two are the ones who understand that Fenster is more than just a pretty picture with a cone.<\/p>\n\n\n\n

Jeunet made a film that everyone enjoys, but that belongs to a few.<\/p>\n\n\n\n

That’s how we make coffee.<\/p>\n\n\n\n
