I sat down and thought: the average check at a coffee shop is around five or six euros. To make the same money as a place that also sells food, you need three or four times more customers. But those customers won&#8217;t come because there are no croissants. A vicious cycle.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">The way out turned out to be unexpected: cut every cost possible. No seating area, no bathrooms, no cashier, no food. Just a window and the best coffee I know how to make.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">That&#8217;s how Fenster was born, literally out of a hole in the wall of one of the five oldest buildings in Vienna. What made it different from day one was radical honesty about what it was. We weren&#8217;t trying to be a cozy caf\u00e9 for everyone. No line, no questions, no decisions. Just you, the machine, and the beans.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">I always start my day with a coffee for myself. Not to check the settings, not out of habit, just because it&#8217;s the one moment when brewing is purely personal. That&#8217;s when you remember why you chose this in the first place.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Fenster is a to-go place, and there&#8217;s something almost paradoxical about the fact that the most valuable moment here is the one when you&#8217;re not rushing anywhere and drinking coffee alone.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">The people who work with us feel it too. We specifically look for baristas who come to Fenster for the coffee, not for the job. When that kind of person joins the team, the morning ritual becomes something shared. I had no idea it would become the symbol of Fenster and end up in thousands of Instagram photos.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">But if you&#8217;ve been here before and already know what specialty coffee is, ask for a filter coffee from our own roast. We brew every cup individually from a single-serve stick we produce ourselves, using a filter machine with controlled temperature and time.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">You can even pick your beans from your phone on the way here. And if you&#8217;re lucky, we&#8217;ll have the Gesha. One of the rarest and most expensive coffees in the world, including 90+ scoring lots from Panama. It was our first real record. Lines of a hundred people, 1,100 coffees a day, three people behind the counter. We were convinced we&#8217;d cracked the formula.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">So we started spending and planning as if that was the new normal. Our own roasting operation, a retail store, new spaces, equipment. All at once, all expensive.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Then winter 2022 hit. Covid restrictions, freezing temperatures, sales tanked, and we found ourselves with a nearly empty bank account and a very large payroll.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">I had to gather the entire team and let everyone go. It was the hardest decision I&#8217;ve ever made as a business owner. But it&#8217;s what saved Fenster.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">That moment permanently changed how I think about growth: success is not a state, it&#8217;s an episode. After every high, the move isn&#8217;t to expand. I read it before I&#8217;d even opened my first caf\u00e9, and it described a taste I&#8217;d never actually tried but already knew I wanted to create. It set the bar I&#8217;m still working toward.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">The sentence came from a well-known and influential entrepreneur who looked me in the eye and said: \u201cI wouldn&#8217;t recommend going into coffee. You&#8217;ll waste your time and money.\u201d<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">After that, I knew it would go the opposite way.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">I still use that same line myself. I say it to everyone who comes to me asking about opening a caf\u00e9. It&#8217;s part of the actual compensation structure. And that changes people&#8217;s entire relationship to their work.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">I&#8217;m bringing that logic to Fenster. A complete failure.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">I couldn&#8217;t figure it out. The cone was there, the coffee was there, it tasted great, but nobody cared.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">The answer turned out to be embarrassingly simple: people walking by had no idea what it was. The name on the menu explained nothing.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">So I asked a friend from the shop next door to pose for a photo, put a cone with latte art in her hand, printed it on a plastic board about 40 by 40 centimeters, and hung it next to the menu.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Sales went up tenfold overnight.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">That photo, not a marketing strategy, not influencers, not ad spend, is what started everything. Later, a blogger from the Gulf posted about us and things really took off. You watch it and immediately feel warm, happy, like you want more.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">That&#8217;s exactly how the Fensterccino works. You see someone walking by with one, you walk up, you get one, and you&#8217;re already glad you did. No explanation needed. It works for everyone, and it&#8217;s genuinely good.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">But&nbsp;<em>Am\u00e9lie<\/em>&nbsp;isn&#8217;t just about cr\u00e8me br\u00fbl\u00e9e and a red coat. Jean-Pierre Jeunet packed every frame with details most viewers simply don&#8217;t catch in time. They don&#8217;t announce themselves. They&#8217;re just there.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">For the people who pay attention, the film becomes something else entirely. Deeper. More personal.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Fenster has that hidden side too: filter coffee from our own roast, brewed individually for each order. Remarkable beans. We don&#8217;t really advertise it.
