La panader\u00eda estaba creciendo y trabaj\u00e1bamos en la cochera de una casa; entre el ruido, los horneados muy temprano o muy tarde, y la entrada de pipas, gas y proveedores, ya empezaba a ser inc\u00f3modo para quienes viv\u00edan ah\u00ed.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Encontr\u00e9 este lugar en plena pandemia. Lo vi en mayo, empezamos a trabajarlo en julio y en septiembre nos mudamos, aunque todav\u00eda no estaba terminado. Lo diferente desde el principio fue que, por primera vez, pudimos dise\u00f1ar un espacio m\u00e1s adecuado para lo que el proyecto necesitaba. Pasa mucho al inicio del d\u00eda, en la hora de la comida, en los momentos de lunch o simplemente cuando se comparte tiempo juntxs, trabajando o no.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">\u00daltimamente tambi\u00e9n se disfruta mucho el proceso de crear productos nuevos y organizar temporadas especiales, como D\u00eda de la Madre, Semana Santa u otros momentos fuera de lo cotidiano. Despu\u00e9s, nuestras conchas, croissants, chocolatines, baguettes, hogazas y s\u00e1ndwiches: cosas sencillas, pero hechas con buen pan, buenos ingredientes y cuidado.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Pero m\u00e1s all\u00e1 de un producto espec\u00edfico, creo que alguien no deber\u00eda perderse la experiencia de ser recibido por Pan con Madre: no como un servicio de lujo elegante, sino como un servicio real, dado por personas reales. Cada d\u00eda hay algo que obliga al proyecto a ajustar su direcci\u00f3n, su forma de trabajar, su car\u00e1cter o su manera de relacionarse con las personas.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Crecer como organizaci\u00f3n tambi\u00e9n nos ha hecho replantear muchas cosas. Aparecen m\u00e1s responsabilidades legales, fiscales, contables, administrativas y humanas. Y ah\u00ed se vuelve evidente que el acceso a cierta informaci\u00f3n tambi\u00e9n tiene una dimensi\u00f3n clasista: si no vienes de una familia con conexiones, si no estudiaste en una universidad con ciertas redes o si no tienes dinero para pagar cierto tipo de asesor\u00eda, llegar a ciertos lugares se vuelve m\u00e1s dif\u00edcil. Pan con Madre vive en un entorno muy espec\u00edfico: Oaxaca, con sus monta\u00f1as, su luz, sus \u00e1rboles, sus p\u00e1jaros, sus manos artesanas, sus mercados, sus luchas y su forma profunda de relacionarse con lo vivo.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Tambi\u00e9n nos influye lo que incomoda: el turismo voraz, la gentrificaci\u00f3n, los precios de los insumos, la dificultad de sostener una organizaci\u00f3n sin perder el alma. Pero junto a eso est\u00e1n la comunidad, la rebeld\u00eda, la firmeza, lxs ni\u00f1xs ri\u00e9ndose, los perros y gatos acompa\u00f1ando, la vida insistiendo. Tal vez una instalaci\u00f3n en el patio, un pan, una comida, una conversaci\u00f3n. Antes de eso, cuentan que tambi\u00e9n fue escuela de m\u00fasica, vivero y sal\u00f3n de ensayos. A m\u00ed me parece muy lindo que el espacio venga de historias ligadas al aprendizaje, la m\u00fasica, las plantas y la reuni\u00f3n.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Tambi\u00e9n hay tres chicos zapotes en el patio. De hecho, buena parte de la decisi\u00f3n de rentar este lugar se cerr\u00f3 cuando aceptamos cuidarlos y no cortarlos. Del primero tomar\u00eda la idea de que la comida no es solo comida: tambi\u00e9n es memoria, cuerpo, emoci\u00f3n, familia y una forma de decir cosas que a veces no se pueden decir directamente. Del segundo, la sensaci\u00f3n de que un lugar puede estar hecho de muchas capas invisibles: historias, \u00e1rboles, oficios, voces, fermentos, m\u00fasica y peque\u00f1as mitolog\u00edas propias.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Y si fuera un disco, tendr\u00eda dos lados. De un lado, la m\u00fasica que escuchamos quienes trabajamos ah\u00ed: cumbia, reggaet\u00f3n, norte\u00f1o, salsa, techno, rock, chilenas y sones. Del otro, la m\u00fasica que suele acompa\u00f1ar a la panader\u00eda: algo m\u00e1s suave, retro y amplio, con cl\u00e1sicos de rock, pop y reggae de los ochenta y noventa.
