How did this place come about and what made it different from the start?
<\/strong>Deja Vu <\/strong><\/a>arose from the desire to create something that didn't exist in Santa Rosal\u00eda. Recently designated a Pueblo M\u00e1gico (Magical Town), we thought we'd add a little more fairy dust to its identity and enrich its local culture. We are the first (and to date, the only) specialty coffee shop in this town with such a unique origin. We strive to create a unique space in its name, giving meaning and connection between us and our home.\u00a0<\/p>\n\n\n\n

What part of the day, space, or creative process do those who work here enjoy the most?
<\/strong>Our space is small, beautiful, and right by the sea. The mornings, when we first open, are warm and filled with light reflecting off the Sea of \u200b\u200bCortez. In the afternoons, the place transforms, becoming an intimate and stimulating space for conversation and ideas. The people who visit us and their stories are like night and day.<\/p>\n\n\n\n

If someone is coming in for the first time, what should they not miss?
<\/strong>An espresso-based drink. We calibrate it daily to meet the demands of the bean, ensuring it's at its best. We recommend the flat white, paired with our scones or a ciabatta. And if you find it free, take a seat on the butterfly stool\u2014the best seat in the house ;)<\/p>\n\n\n\n

What has been an interesting challenge that has made you rethink something about the project?
<\/strong>Interestingly, our location is a bit of a challenge. It offers a beautiful view and a welcoming atmosphere, yet we're somewhat hidden within the Marina and can easily be missed by those driving by. However, we believe a good sign can solve all that.<\/p>\n\n\n\n

Coffee culture is also deeply rooted in Santa Rosal\u00eda. Dark roast, drip coffee, and bag coffee are commonplace in many other places, a familiar flavor that evokes nostalgia and comfort for most. Introducing coffee profiles that challenge the boundaries of what one thinks they know is a challenge, but it's incredibly rewarding to have them return for another cup.<\/p>\n\n\n\n

What influence, idea, or reference continues to shape the way you work today?
<\/strong>Sensitivity. Whether it's in the calibration, in the appreciation of flavors and their harmony, in noticing the nuances of the sky during the day and how the sea reflects it, the tone and energy with which we welcome our visitors. Whether we are their first sip of coffee that will fill them with energy for the rest of their day, or if we are the last breath of relaxation that ends their afternoon, Deja Vu is like that: a bit of reliving the sensations of everyday life, recognizing them as lived and celebrating that we can experience our emotions again and again.<\/p>\n\n\n\n

What place, project, or person has inspired you recently and why?
<\/strong>Local entrepreneurs and businesses that grow as we (and the town) grow. Observe other creative minds and compassionate souls striving to offer the best to their community.\u00a0<\/p>\n\n\n\n

If your space could invite someone to collaborate for a day, who would it be and what would you do together?
<\/strong>Definitely La Nebulosa<\/strong><\/a> or Cosmos<\/strong><\/a>. Jocelyn<\/strong><\/a>, its founder, has been incredibly kind and approachable, offering great advice and tips. She also roasts delicious coffee. Since Deja Vu is a business founded by a woman, it inspires us to see other women-led projects flourish.\u00a0<\/p>\n\n\n\n

Is there an object, corner or detail of the place that has a story that few people know?
<\/strong>Many of the cups, glasses, utensils, and tools we use every day are things my mom gradually bought after I told her I wanted to open a coffee shop. All the plants, as well as the mint, rosemary, and spearmint we use for drinks and recipes, are from my dad's garden.<\/p>\n\n\n\n

If this project were a city, a book, or a record, which would it be and why?
<\/strong>It's a playlist that already exists, called Ola Pop. It was started by the first barista who worked with us, and to this day we continue adding songs that fit the vibe we like to hear on the speakers during rushes and that perfectly capture the Deja Vu vibe. Some of the artists on the playlist are: Valeria Jasso, Elsa y Elmar, RENEE, Ruzzi, and Lunal\u00e9.
